This carbon steel kitchen knife is a versatile all-purpose tool, perfect for preparing fish, meat, and vegetables.

The blade is crafted from high-quality carbon steel, offering exceptional sharpness and long-lasting edge retention.
Thanks to its lightweight construction and a perfectly balanced handle, the knife is easy to guide with precision and comfort.

Available with a 180 mm or 210 mm blade, the steel features a hardness of 60–62 HRC, delivering the ideal balance between sharpness and durability.

Each knife is hand-forged in Austria by an experienced bladesmith.
The distinctive forged finish with visible hammer marks, paired with unique wooden handle scales made from both local and exotic hardwoods, makes every knife a true one-of-a-kind piece.

Personal engravings look especially striking on this knife – adding a custom touch to a beautifully crafted tool.

Reinigung und Pflege

After use, rinse with water and dry thoroughly before storing.

Never store the knife loose in a drawer!
We recommend using a knife sheath or magnetic knife strip for safe storage.

This Damascus knife – especially the oiled hardwood handle – is not dishwasher safe.
Thanks to the high-carbon steel, the blade remains exceptionally sharp for a long time, but it requires proper care to maintain its performance and finish.

Carbon-Stahl

Mit einer Stärke von ca. 2,5 mm und einer Härte von 60-62 HRC ist das Messer äußerst robust und zuverlässig.

Durch den Einsatz dieses Stahls bleibt das Messer sehr lange sehr scharf, allerdings ist es dadurch nicht rostfrei und Bedarf der richtigen Pflege.

Handgeschmiedet

Die Messer werden in Österreich handgeschmiedet.

Da während des gesamten Herstellungsprozesses das Messer in der Hand des Meisters ist, fallen etwaige Mängel sofort auf. Die vielen Handgriffe sind gleichzeitig eine Qualitätskontrolle und garantieren ein perfektes Ergebnis.

Gravur

Wir können auf Wunsch auch individuelle Gravuren in die Messerklinge hineinarbeiten.

Das Maximum für eine Messergravur sind aus technischen Gründen 8 Zeichen.

Our hand-forged chef's knives originate from the workshop of talented bladesmith Michael Ziegelböck, based in Haag am Hausruck, Upper Austria. Since 2009, he has dedicated himself with passion and devotion to the creation of premium cutlery. His production techniques and materials are of the highest caliber—a quality that is reflected in every single one of his products.

In the crafting of each knife, countless steps—from the initial planning of the blade to the finishing of the leather sheath—are performed by hand. Michael Ziegelböck is an artisan with an exceptional commitment to every detail. His knives are not merely functional; they are works of art that serve as a centerpiece in any kitchen.

In his own forge, which he has optimized to the highest degree, he primarily creates bespoke commissions and one-of-a-kind pieces for his clients. Here, he fully utilizes his diverse spectrum of materials, ranging from steel and wood to leather. Every knife is unique, crafted by Michael Ziegelböck with a profound love for detail and masterful craftsmanship.
